Want to try a chicken curry that tastes just like the traditional curry but do not want to do all those chopping and cutting? Try this recipe, I assure you that the result would be awesome.
Crush the shallots and green chilies in a food processor
Into a bowl, drop the chicken pieces, to it add the crushed shallots and chilies
Add grated ginger, garlic and coconut oil and salt
Mix everything with a spatula
After that keep it aside until the masalas are ready.
Dry roasting the masalas
To a hot pan or to a pan kept on low flame,put all the powders (turmeric, chili, coriander, garam masala and pepper)
Roast it for 2-3mins or until the raw smell fades
Keep it aside
Making the curry
To a skillet, pour 2 tbsp of coconut oil, and put mustard seeds
After the seeds splutter, put the marinated chicken
Put curry leaves
Stir it well
Close and cook for 10mins
Then after that, open and stir again
Once the chicken becomes pale or white, put the roasted masalas
Stir well and pour warm water to it along with some salt
Close and cook for another 15-20mins
After that stir and cook until the gravy reduces or thickens or as the gravy you require
That's it...

This curry tastes just as the traditional one but the shallots enhance its taste. If you want a fried consistency, keep stirring until the gravy is fully evaporated. Then it would be much tastier.
