Gulab Jamun
It is already Diwali….. The festival of lights and celebrating the victory of good over evil.. Wishing all my dear friends a VERY HAPPY DIWALI.. Want to try making gulab jamuns for this Diwali? Try this out, it is super easy and awesome too…. Made with milk powder, it gives a soft texture. Hope you would love it. The recipe with khoya, i found that difficult and but this one is super easy.
Ingredients
- 1 cup Milk powder
- 1/4 cup All-purpose flour
- 1/8 tsp Salt
- 1/4 tsp Cardamom powder
- 1 pinch Baking Soda
- 1 tsp Ghee
- 3 tbsp Curd
- Milk (if needed)
For Sugar Syrup
- 1½ cups Water
- 1¼ cups Sugar
- 1/4 tsp Cardamom powder
- 1/4 tsp Rose water
For frying
- Oil required for frying
- 1 tbsp Ghee
Instructions
Sugar Syrup
- Into a flat pan on medium flame, pour water, add sugar, and cardamom powder
- Let it boil and then add the rose water and stir well
- Stir until the syrup start to stick onto the fingers when touched
- Do not wait until it gets one thread consistency
Making the Jamuns
- Into a bowl, sift together the milk powder, all-purpose flour, baking soda, salt, and cardamom powder
- Then pour the curd and start mixing together
- You would need to pour more curd or milk to mix
- And make the dough into a ball, no need of kneading
- Add the ghee and mix well
- Out of the dough, make small balls of 1inch size
- And move to another plate
- Meanwhile, heat the oil and ghee
- And place the small dough balls into the oil and fry it for 4-5mins
- Fry it on medium flame until it turns golden brown
Putting the jamuns in the syrup
- Then after frying put them into the sugar syrup
- And warm it a little on low flame and DO NOT BOIL

It is natural that the sugar syrup would thicken after sometime, so you just need to warm it up before serving, making the gulab jamuns very soft.
