Chicken Rice
A very yummy recipe for Chicken Rice in one pot, with all Indian Spices, and turned out to be awesome. Everything goes into the pot and comes out to be a super tasty dish. Try this and you are going to love this..
Ingredients
- 1 kg Chicken Medium pieces
- 2 big Onions finely chopped
- 1 tbsp Ginger-garlic paste
- 3 or 4 Green chilies Slit into halves
- 2 small Tomato
- 1 handful Cilantro chopped
- 1 handful Mint leaves chopped
- 1/2 cup Warm water
- Salt to taste
Masala Powders
- 1/2 tsp Turmeric powder
- 1 tbsp Chili powder
- 1/2 tbsp Coriander Powder
- 2 tsp Garam masala
Whole Spices
- 1 Bay leaf
- 1/2 inch Cinnamon stick
- 4 Cardamom
- 5 Cloves
- 2 Dry Red Chilies
- 1/2 tsp Cumin seeds
- 1/2 tsp Fennwl seeds
For Rice
- 3 cups Basmati rice soaked in water for 30mins
- 4 cups Hot water (or more depending on the gravy left in the curry)
- Salt to taste
For Frying Onions
- 1/2 cup Onions (finely chopped)
- 1 tbsp Ghee
- 2 tbsp Vegetable oil
Instructions
Frying Onions
- To the cookpot, pour ghee and vegetable oil
- When it gets heated, put the onion (1/2cup), stir it well
- Fry it until brown color
- And take it off the pot and keep it aside
Making the Chicken Curry
- To the same pot with oil and ghee, put the whole spices – bay leaf, cinnamon, cardamom, cloves and dried red chilies
- Stir well
- Add the chopped onions and stir
- Once the onions are half done, put the fennel seeds and cumin seeds and stir
- Then to it add ginger-garlic paste and green chilies
- Stir for 4-5mins until everything is well sauteed
- Once sauteed, add the masala powders – turmeric powder, chili powder, coriander powder and garam masala.
- Stir everything until the raw smell of the masalas fade
- Then to it add the chopped tomatoes, and cilantro- mint leaves, stir and let it turn mushy
- Once the tomatoes have turned soft drop in the chicken pieces, salt and stir well
- Add the warm water (1/2cup), stir
- Close and cook for 20-25mins, stirring intermittently
- After 25mins, open the pot and give a good stir
Adding Rice
- Once stirred, put the soaked rice into the gravy and gently stir
- Add the hot water (4cups)
- The amount of water would be more or less than 4 cups, depending on the amount of gravy left in the chicken curry
- Add the lemon juice and salt
- Stir everything well
- Close and cook for 20mins or until the rice is cooked
- Once cooked, open the pot and gently stir with a fork or spoon without breaking the rice
- Garnish with the fried onions
- TIP: To prevent the rice from further cooking, you can move the chicken rice to another flat bowl and spread it out. And serve it when warm, this would help the rice to be separated and not sticky.
