Shrimp roast
Here comes the yummy shrimp roast recipe. Shrimp called as Konju in Kerala is one of the yummiest shrimp recipes you would ever taste. Shrimp is cooked first with a few spices which is later added to the spicy gravy to come up as a wonderful combination for chapathi, appam or even rice. The recipe, I have shared here is a little spicy, if you do not want that much heat, reduce the number of green chilies added and that should be fine. The chili powder added is basically giving color to the roast. The shrimp while getting cooked initially will leave some water, so if there is any water after cooking shrimp, do not throw the stock (as all the flavor of the shrimp would be in the stock) but keep it aside to add to the gravy along with cooked shrimp. It does give the gravy a rich flavor. Always remember to devein and clean the shrimp well or else it could make you sick. So even when you buy deveined shrimp from the stores, have a second look for any remains in the pieces, to avoid any allergic reactions. Just to be double sure. So let's start the recipe.
Ingredients
For Cooking Shrimp
- 450 gms Shrimp Cleaned and Deveined
- ½ tsp Turmeric powder
- 1 Chili powder
- ½ Pepper powder
- Salt to taste
- 3 tbsp Water
For the gravy
- 2 tbsp Coconut oil
- 1 tsp Mustard seeds
- 1 tsp Fenugreek seeds
- ¼ cup Coconut pieces 1 inch long pieces
- 1 tbsp Ginger chopped
- 3 or 4 Green Chilies cut into halves
- 1 tbsp Garlic chopped
- 15-20 Pearl onions each cut into three pieces
- 2 small Tomato chopped
- 1½ tsp Chili powder
- 2 tsp Coriander powder
- ½ tsp Turmeric powder
- 1 tsp Garam masala
- ¼ cup Warm water
- Curry leaves
- Salt to taste
Instructions
Cooking shrimp
- Into the cleaned shrimps, add the turmeric powder, pepper powder, chili powder and salt
- Apply the powders well on the shrimp
- Into a pan kept on medium flame, drop the shrimp mixed in spices
- And a little water to it and once more mix
- Close and cook for 7mins
- After that move the shrimp into a bowl along with any stock left.
Making the gravy
- Into a skillet or clay pot, pour coconut oil
- Once it is hot, add the fenugreek seeds and mustard seeds
- Add the coconut slices and stir until it reaches a golden brown
- Add the ginger, garlic and green chilies and curry leaves
- Stir well for around 3mins until it is sauteed
- Then add the chopped pearl onions to it and mix well
- Stir well until the onions turn transcluscent
- Then to it add the turmeric powder, chili powder, coriander powder, garam masala and salt
- Mix well and stir until the raw smell of the powders fade
- To it add the chopped tomatoes and stir until it turns mushy
- Once it is soft, then add the cooked shrimp along with the stock
- Stir and add warm water and stir everything well
- Close and cook for around 10- 15mins
- Once it is cooked, add the curry leaves for garnishing
- Stir well and take it off the stove
- Yummy Shrimp Roast is Ready!!
