Baby Corn Manchurian

Ingredients
Preparing Baby corn
- 250 gms Baby corn cut into two inches long
- 1/4 cup All-purpose flour (maida)
- 2 tsp Chilli powder
- 1 tsp Pepper powder
- Salt (to taste)
For frying
- 5 tbsp Vegetable oil
- 1 tbsp Sesame oil
- 1/2 cup Onion cut into cubes
- 1/2 cup Capsicum cut into cubes
For the sauce preparation
- 2 tsp Vegetable oil (only if needed)
- 1 tsp Ginger chopped into small pieces
- 3 cloves Garlic chopped into small pieces
- 4 Chili cut into pieces
- 1 big Onion chopped into small pieces
- 1/4 cup Spring onions (white portion)
- 1 tbsp Soya sauce
- 1/2 tbsp Chili sauce
- 2 tbsp Tomato sauce
- 1/2 cup Water
- Corn starch slurry (1/2cup of water +1tbsp of corn starch)
- 1 tsp Vinegar
- Spring onions green portion (for garnishing)
- Salt to taste
Instructions
Preparing Baby corn
- Into a bowl, drop in chili powder, all-purpose flour, pepper powder, and salt
- Mix well
- Put the baby corn pieces, stir well until well coated
Frying
- Into a skillet on medium flame, pour 4tbsp of vegetable oil for frying
- once the oil turns hot, drop the baby corn pieces
- Fry for 5-6mins, stirring halfway through
- Once the sides become brown, move to another plate
- To the same pan, pour 1tbsp of Sesame oil, 1tbsp of vegetable oil
- Drop the cut onion and capsicum pieces
- Stir until the edges get brown in color
- Move it to another plate
For sauce preparation
- To the same pan, drop ginger, garlic and chilies
- If there is not enough oil, pour 2tsp of vegetable oil
- Once the ginger, garlic and, chilies, turn slighlty brown, drop in onion
- Stir until the onion is half done
- Drop the spring onion , stir well
- Once it is sauteed, add all the sauces, mix well
- Pour water and stir and let it boil
- Then add the corn starch slurry
- Let it boil and the gravy thicken
- After that, drop the fried baby corn, onion, capsicum
- Stir everything well
- Add vinegar
- Stir for 3mins more on high flame
- Garnish with Spring onions
