Ingredients
  

  • 2 cups Vermicelli
  • 6 oz Paneer cut into cubes
  • ¼ cup Cashew nuts
  • 2 tbsp Ghee
  • tbsp Vegetable oil
  • 2 Eggs
  • 3 cups Hot water boiled
  • Salt as per taste

Whole spices

  • ¼ tsp Fennel seeds
  • 4 Cloves
  • ½ inch piece Cinnamon
  • 1 Star anise

Vegetables

  • 1 Onion chopped into small pieces
  • 1 tbsp Ginger-garlic paste
  • 3 Green chillies Slit and cut into pieces
  • 2 Carrots cut into small pieces
  • 1/4 cup Green peas
  • Cilantro as required/as per taste
  • Lemon juice of one lemon

Curry powders

  • ¼ tsp Turmeric powder
  • ½ tsp Pepper powder
  • ¼ tsp Garam masala

Instructions
 

  • Into a nonstick pan, pour 1/2tbsp of Vegetable oil and shallow fry the paneer cubes
  • Into another pan, pour 1 tbsp of ghee, and roast the vermicelli until golden brown color
  • Once after raosting, move the vermicelli into hot boiled water
  • Keep it aside and stir intermittently
  • After moving, pour a little oil and ghee and roast the cashew nuts and roast it.
  • Move the nuts into another bowl
  • Then to the pan, drop the whole spices
  • Once the spices turns hot, put the onion, saute well
  • Add ginger garlic paste and the green chillies, stir well until sauteed
  • Then drop the carrots, green peas and stir well
  • Pour 3tbsp of warm water to it, to cook the veggies
  • Once the veggies turn half cooked, drop the curry powders and stir well
  • Add eggs to the center of the pan and scramble it
  • After that drop the vermicelli which would have been cooked by now
  • Put the fried paneer, cilantro and lemon juice
  • Combine everything well
  • Add salt to taste
  • Mix everything
  • Cover and cook for 5mts, let the steam come
  • Open the pan and garnish with cashew nuts.
