Mushroom Stir Fry
Want to try a mushroom recipe for rice or chappathi? Try this Mushroom Stir fry, it is a good combination for rice for lunch. The capsicum, the crunchy coconut and the freshly crushed pepper gives the recipe an awesome flavor.
Ingredients
- 1 Capsicum Cut into slices
- 250 gms Mushrooms Cut into medium size pieces
- 1 big Onion chopped
- 2 tbsp Coconut oil
- 2 tbsp Coconut slices
- 1/2 tsp Ginger minced
- 2 tsp Garlic minced
- 2 or 3 Green Chilies Slit into halves
- 2½ tsp Chili powder
- 2 tsp Black pepper Freshly Crushed
- Curry leaves
- Salt as per taste
Instructions
- Into a skillet or wok, pour coconut oil and once it is heated put the sliced capsicum
- Put 1/2tsp of Chili powder and salt
- Mix everything and fry the capsicum for 6-7mins
- Then take off the capsicum and keep it to the side
- Into the remaining oil, put the chopped coconut slices and fry it until it turns slight brown in color
- Then add the ginger, garlic and green chilies.
- Stir and saute for 3mins
- Then to it add the choppd onions and salt
- Stir again and saute until the onion turn soft
- Then to it add 2tsp of chili powder and freshly crushed black pepper and stir well
- Add cut mushrooms to it, drop in curry leaves and salt
- Mix everything well
- Close and cook for 15mins until the mushroom is cooked well
- Then open, stir, and cook on high flame until the water is almost gone
- After that, drop the fried capsicum which is kept aside
- Stir for 5mins and turn off the flame
- Yummy and Easy Mushroom Stir Fry is Ready!!
